Spice blends are so useful, particularly when time is short. Many premixed blends in stores can be bland, too salty or just stale. In any case, it’s nice to customize blends to one’s own taste. One of my recent obsessions is the quest for a good vegetarian chili that has a authentic texture and rich flavor. This chili mix came out of that quest.
Chili Seasoning Spice Mix
3 tbsp chili powder
2 tbsp masa
1 tbsp each: Korean red pepper*, cumin, onion powder, garlic powder, dried oregano
Measure out and mix! Masa adds a little corn flavor and thickness. It could easily be increased to 3 tbsp.
* Gochugaru is a dried Korean pepper. It’s not overbearing and has a depth of flavor that’s almost smoky. Half tbsp cayenne and half tbsp sweet paprika might be a good substitute (but I haven’t tried it).
